Description
If you want to make the dish less fatty, reduce the amount of cream by half. Use boneless cod fillet, preferably loin cod, or carefully remove all small bones.
Ingredients
- Spaghetti - 17.6 oz
- Smoked Salmon Flavored Croutons - 7.1 oz
- Fennel - 1 head
- White Part of Leek - 1 piece
- Dry White Wine - 1 fl oz
- Chopped Sage Leaves - 2 tablespoons
- Pickled capers - 2 tablespoons
- Cream 22% - 1 fl oz
- Cod fillet - 2 pieces
Step by Step guide
Step 1
Cut the cod into medium pieces about 1 cm in size.
Step 2
Heat olive oil in a pan and add the cod to sear it until golden brown on top. About 2-3 minutes over high heat, stirring constantly.
Step 3
Then add diced fennel and sliced leek, reduce the heat and simmer for another 2-3 minutes.
Step 4
Next, add diced smoked salmon, capers, and white wine, and simmer for about 2 minutes.
Step 5
Add the cream and simmer for another 2-3 minutes, then remove from heat, keeping the sauce warm.
Step 6
Meanwhile, start boiling the spaghetti (you can substitute with fusilli, penne, or tagliatelle) according to the package instructions. 2-3 minutes before they are done, ladle some of the pasta water into a bowl for the sauce. Set it aside.
Step 7
Once the spaghetti is ready, mix it well in a bowl with the sauce and add a little pasta water to keep the sauce from being too dry.
Step 8
Finely chop the parsley (or cilantro), removing the stems beforehand.
Step 9
Serve the spaghetti with the sauce, sprinkled with finely chopped parsley on top.
