Ingredients
- Carrot - ½ pieces
- Onion - ½ heads
- Celery stalk - ½ pieces
- Garlic - ½ cloves
- Olive Oil - 3 spoons
- Black Beluga Lentils - 5.8 oz
- Spaghetti - 8.8 oz
- Marinara sauce - 12 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Finely chop the onion, carrot, and celery.
Step 3
Slice the garlic cloves.
Step 4
Sauté the chopped vegetables in a large pot over medium-low heat for 7 minutes, until they are tender.
Step 5
In another pot, add the lentils, cover with water, bring to a boil, and cook until the lentils begin to soften, about 20 minutes. Remove from heat.
Step 6
Wrap the spaghetti in a clean kitchen towel, tucking the edges inside. Twist, roll, and bend the bundle to break the spaghetti into pieces of 2–4 cm.
Step 7
In a large pot, bring salted water to a boil and cook the spaghetti until al dente. Before draining, scoop out about half a cup of the water and set it aside.
Step 8
Drain the water from the lentils and transfer them to the pot with the vegetables.
Step 9
Add the marinara sauce, bring to a boil, cover, and simmer for 10 minutes.
Step 10
Add the pasta and reserved cooking water. Keep the pasta with the sauce over low heat for about 3 minutes to allow the flavors to meld. Season with salt and pepper to taste.
Step 11
Serve immediately.
