Description
It is preferable to use a dry red wine with a high sugar and alcohol content (15 percent), such as an Italian Primitivo, a Croatian Crljenak Kastelanski, or a Californian Zinfandel.

- Broccoli - 28.2 oz
- Spaghetti - 15.9 oz
- Sugar - 1 tablespoon
- Garlic - 4 cloves
- Olive Oil - ⅓ glasses
- Chili Flakes - ½ spoons
- Salt - to taste
- Ground Black Pepper - to taste
- Grated Pecorino Pepato Cheese - 2.1 oz
- Red Grape Juice - 25 fl oz
Step by Step guide
Step 1
Break the broccoli into small florets (about 2 cm each) and blanch them for 2 minutes in a large pot of boiling salted water (6 liters with 2 tablespoons of salt). Use a large slotted spoon to transfer the broccoli to a bowl.
Step 2
Bring the water used to blanch the broccoli back to a boil and add the spaghetti. Cook, stirring, for 5 minutes, then drain in a colander and discard all the water.
Step 3
In the empty pot, pour in the red wine, add sugar, bring to a boil, and let it simmer for 2 minutes. Then, add the undercooked spaghetti to the boiling wine. To prevent the pasta from sticking to the pot, gently stir it occasionally with tongs. Cook in the wine over high heat for about 6 minutes, until most of the liquid has evaporated. (The pasta should be slightly undercooked.)
Step 4
Immediately after the spaghetti begins to boil in the wine, heat olive oil in a large, heavy-bottomed skillet over medium-low heat. Add the minced garlic and red pepper flakes. Occasionally shaking the skillet, cook until the garlic turns pale golden (about 5 minutes).
Step 5
Add broccoli, salt (3/4 teaspoon), and black pepper (1/2 teaspoon) to the skillet with the oil and garlic, and cook, stirring, for 1 minute.
Step 6
Increase the heat under the pan with the broccoli, add the spaghetti, and gently toss with tongs, cooking until all the wine has evaporated (about 2 minutes).
Step 7
Remove the spaghetti from the heat, mix with cheese, and serve immediately.
