Description
Cherry tomatoes are perfect for this dish in both size and sweetness. Be sure to fish out the garlic after frying – it's essential! Wine is a matter of personal preference, but it adds a special zest. You can also add a mix of freshly ground colored pepper. Dried basil works best – just a little. Another option is to drizzle the dish with fresh lemon juice.
Ingredients
- Spaghetti - 3.5 oz
- Seafood cocktail - 5.3 oz
- Marinated cherries - 8 pieces
- Olive Oil - 1 tablespoon
- Red Grape Juice - to taste
- Basil - to taste
- Garlic - 1 clove
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Bring a pot of water to a boil for the spaghetti.
Step 2
Cut the garlic clove in half. Similarly, cut each tomato into two halves. Heat the oil in a skillet and add the garlic. Allow the oil to absorb its flavor, then add the tomatoes. Let them simmer on low heat for a while until the tomatoes become tender and slightly dried. Remove the garlic.
Step 3
In the meantime, add the spaghetti to boiling water and cook until al dente.
Step 4
Add seafood to the tomatoes. If using canned seafood in oil, let it drain, otherwise the fish oil will overpower the olive oil with its smell. Without covering, allow the mixture to dry out over high heat, but be careful not to overcook. The octopus should have a golden crust.
Step 5
Use a slotted ladle to scoop the pasta out of the pot and add it to the seafood sauce. Pour in the wine. Bring to a boil. Sprinkle with dried basil.
