Ingredients

  • Olive Oil - 2 fl oz
  • Garlic - 1 head
  • Onion - 1 head
  • Raisins - 2.6 oz
  • Swiss chard leaves - 31.7 oz
  • Water - 4 fl oz
  • Spaghetti - 15.9 oz
  • Kalamata olives - 2.6 oz

Step by Step guide

Step 1

Peel the garlic and slice it into very thin pieces.

Step 2

Heat the olive oil in a large skillet and add the garlic. Cook, stirring, until golden brown, about 3 minutes. Use a slotted spoon to transfer to a paper towel.

Step 3

In the same skillet, add the finely chopped onion and cook for about 3-5 minutes until soft. Then add the raisins and cook for another minute.

Step 4

To the skillet with the onion, add the chopped Swiss chard stems, water, and 0.75 teaspoons of salt and pepper. Cover and cook over medium heat until soft, about 5 minutes. Then add the Swiss chard leaves, cover again, and cook until soft for another 5 minutes.

Step 5

Meanwhile, cook the spaghetti in a large pot of boiling salted water until al dente. Drain, reserving 1 cup of the water.

Step 6

Add the spaghetti to the skillet and mix in the chopped olives, 125 ml of the reserved spaghetti water, season with salt and pepper. Add more water if necessary. Top with garlic chips and serve.
