Ingredients
- Spaghetti - 8.8 oz
- Eggplants - 2 pieces
- Onion - 1 piece
- Garlic - 3 cloves
- Tomatoes - 6 pieces
- Basil - to taste
- Passata Tomato Sauce - 4 tablespoons
- Oregano - to taste
- Salt - to taste
- Ground Black Pepper - to taste
- Red Grape Juice - 3 fl oz
- Vegetable Oil - 1 tablespoon
Step by Step guide
Step 1
Bring water to a boil, add a tablespoon of vegetable oil, and cook the spaghetti until al dente.
Step 2
Sauté the garlic, remove it, and sauté the onion until golden.
Step 3
Cut a cross on the tomatoes, blanch them, and remove the skin. Dice and add to the onion.
Step 4
Stir and add a little hot water and the tomato paste.
Step 5
Pour in the wine, add the spices. Reduce the heat and simmer until the volume is reduced by a third.
Step 6
Cut the eggplants. Heat oil in another pan and sauté the eggplants until cooked.
Step 7
Add the eggplants to the tomatoes and mix in the spaghetti.
