Spanish Artichokes with Garlic

Ingredients

  • Salt - to taste
  • Ground Black Pepper - ¼ teaspoon
  • Champagne Vinegar - 0 fl oz
  • White bread - 1 piece
  • Parsley - 1 stalk
  • Garlic - 1 clove
  • Onion - 1 piece
  • Olive Oil - 2 fl oz
  • Wheat Flour - 1.1 oz
  • Lemon - 1 piece
  • Spanish artichokes - 1 piece

Step by Step guide

Step 1

Trim the base of the artichoke, remove the outer leaves. Extract the inner stalks and drizzle with the juice of half a lemon. Then cut into sticks about 4 cm long. Divide the heart into 4 parts. Place everything in a large bowl with water and the juice of half a lemon. Then mix a tablespoon of flour with water, pour the mixture into a pot, add water and a pinch of salt. Cover and bring to a boil. Immerse the artichokes in the pot and cook on low heat for 1 to 1 ½ hours until they are tender.

Step 2

Heat the oil in a pot, quickly fry the bread – crustless for 2 minutes on each side, then remove with a spatula. Add finely chopped onion and cook on low heat, stirring, for 10 minutes.

Step 3

Meanwhile, let the artichokes drain in a colander, reserving the liquid they were cooked in.

Step 4

Crush the garlic, parsley, fried bread, pepper, and salt in a mortar and add this mixture to the pan with the onion. Add the remaining flour and cook, stirring, for 2 minutes. Stir in the vinegar and a bit of the liquid in which the artichokes were cooked.

Step 5

Add the artichokes and enough of the cooking liquid to cover all the contents of the pan. Season with salt and cook for 10 minutes. Serve immediately.
