Description

Cocido is a hearty Castilian peasant dish that somewhat resembles our split pea soup with smoked meats. Cocido serves as both a first and second course.

Ingredients

  • Chickpea - 14.1 oz
  • Veal - 10.6 oz
  • Jamón - 4.9 oz
  • Thick Beef Rib - 17.6 oz
  • Bacon - 5.3 oz
  • Chorizo - 10.6 oz
  • Garlic - 2 cloves
  • Onion - 1 head
  • Carrot - 1 piece
  • Potato - 2 pieces
  • Vermicelli - 4.2 oz
  • White Cabbage - 21.2 oz
  • Salt - to taste

Soak the chickpeas in water overnight, then drain and rinse them.

Cut all the meat into large pieces, about 2 inches on each side, place it in a pot, and add enough water to cover the contents.

Place on the heat, bring to a boil, skim off the foam, season with salt to taste, and simmer on low heat for about an hour. After an hour, add the chickpeas.

Add the whole onion, garlic, and carrot, as well as the cabbage. Cover with a lid and simmer on low heat for 1.5 hours.

In a separate pot, boil the peeled potatoes until tender, adding salt to taste.

Arrange the meat with vegetables and chickpeas on a large platter.
