Description
Cocido is a hearty Castilian peasant dish that somewhat resembles our split pea soup with smoked meats. Cocido serves as both a first and second course.
Ingredients
- Chickpea - 14.1 oz
- Veal - 10.6 oz
- Jamón - 4.9 oz
- Thick Beef Rib - 17.6 oz
- Bacon - 5.3 oz
- Chorizo - 10.6 oz
- Garlic - 2 cloves
- Onion - 1 head
- Carrot - 1 piece
- Potato - 2 pieces
- Vermicelli - 4.2 oz
- White Cabbage - 21.2 oz
- Salt - to taste
Step by Step guide
Step 1
Soak the chickpeas in water overnight, then drain and rinse them.
Step 2
Cut all the meat into large pieces, about 2 inches on each side, place it in a pot, and add enough water to cover the contents.
Step 3
Place on the heat, bring to a boil, skim off the foam, season with salt to taste, and simmer on low heat for about an hour. After an hour, add the chickpeas.
Step 4
Add the whole onion, garlic, and carrot, as well as the cabbage. Cover with a lid and simmer on low heat for 1.5 hours.
Step 5
In a separate pot, boil the peeled potatoes until tender, adding salt to taste.
Step 6
Strain the broth.
Step 7
Arrange the meat with vegetables and chickpeas on a large platter.
Step 8
Bring the broth to a boil and cook the noodles in it.
Step 9
Cut the vegetables into large pieces and return them to the pot with the meat and chickpeas, then add the potatoes.
Step 10
Serve with noodle soup.
