Spelt with Fresh Herbs
Ingredients
- Spelt - 7.1 oz
- Vegetable Broth - 6 cups
- Salt - to taste
- Extra virgin olive oil - 2 tablespoons
- Shallot - 1 head
- Minced garlic - 2 cloves
- Dry White Wine - 1 cup
- Marjoram - 2 tablespoons
- Green Onion - 2.5 oz
- Grated Parmesan cheese - to taste
Step by Step guide
Step 1
Rinse the spelt and place it in a bowl. Pour boiling water over it and let it sit for 30 minutes. Alternatively, cover with room temperature water, cover with a lid, and leave overnight. Drain most of the water, leaving ½ cup for later use.
Step 2
Place ¼ cup of spelt in a blender and crush the grains with a few presses of the button.
Step 3
In a pot, combine the soaking water from the spelt with the broth and bring to a boil over medium heat.
Step 4
Heat the oil in a large skillet over medium heat. Add the shallot and garlic and sauté for 3-5 minutes until the shallot is soft. Mix the onion with the whole and crushed spelt and cook over medium heat until the grains start to break apart. Add the wine and continue cooking until it evaporates.
Step 5
Add a bit of boiling broth just to cover the grains. Cook, stirring frequently, until it evaporates. Add more broth and continue cooking for 25 minutes until the spelt is tender.
Step 6
Stir in the marjoram, shallot, pepper, and additional broth if needed. Season with salt to taste. Cook for another 5 minutes, stirring often.
Step 7
Add more broth again and remove from heat. Stir in parsley and Parmesan if using.
Step 8
Serve immediately in wide soup bowls with a drizzle of walnut oil if desired.
