Ingredients
- Rice - 2 cups
- Ghee - 2 tablespoons
- Butter - 1.8 oz
- Toasted Cumin Seeds - 2 teaspoons
- Mild Chili Spice - 1 piece
- Grated Ginger Root - 1.1 oz
- Ground Cinnamon - 1 teaspoon
- Ground Nutmeg - ½ teaspoon
- Cardamom - 2 pieces
- Cilantro - 1.8 oz
- Salt - to taste
Step by Step guide
Step 1
Wash the pepper, remove the stem and seeds, and cut it into thin strips.
Step 2
Thoroughly rinse the rice, soak it in cold water for 15 minutes, then drain and let it sit in the colander for another 15 minutes.
Step 3
In a pot, heat the ghee and sauté the cumin seeds and chili pepper while stirring.
Step 4
When the cumin seeds start to darken, add the cinnamon, ginger, cardamom, and nutmeg.
Step 5
Add the rice to the pot, stir, and sauté for 2 minutes, then pour in 800 ml of boiling salted water, cover the pot with a lid, reduce the heat to low, and cook without stirring for 15–18 minutes.
Step 6
When the rice has absorbed all the water, remove the lid and leave the pot on low heat for a few more minutes.
Step 7
Remove the cardamom pods from the pot, stir in the butter, add chopped cilantro, and gently mix the rice with a cooking fork.
Step 8
This rice can be served with any vegetable or fish dishes.
