Spiced Rice with Nuts
Ingredients
- Basmati rice - 9.7 oz
- Macadamia Nuts - 0.9 oz
- Pistachios - 0.9 oz
- Pistachios - 0.9 oz
- Cardamom - 2 pieces
- Toasted Cumin Seeds - ¾ g
- Coriander essential oil - ½ piece
- Peanut Butter - 1½ tablespoons
- Onion - 1 head
- Cinnamon - 1 piece
- Bay leaf - 1 piece
- Salt - 1 teaspoon
Step by Step guide
Step 1
In a mortar, crush the cardamom pods and the cumin and coriander seeds. Toast the spices over high heat for one minute. Reduce the heat to medium, add the oil, onion, nuts, and cook until the mixture is golden brown.
Step 2
Stir in the rice. Pour in 570 ml of boiling water, add the cinnamon stick, bay leaf, season with salt and pepper. Mix and cover the pan, cooking on low heat for 15 minutes. Transfer the rice to a serving dish and fluff gently with a fork before serving.
