Ingredients
- Watermelon - ¼ piece
- Lemon - 1 piece
- Olive Oil - 1½ tablespoons
- Shallot - 1 head
- Ground coriander - 2 teaspoons
- Tiger shrimp in brine - 16 pieces
- Watercress - 2.1 oz
- Banana Leaves - 2.1 oz
- Avocado - 1 piece
- Vegetable Oil - to taste
Step by Step guide
Step 1
Place the watermelon in a colander for 5 minutes to drain excess liquid. Cut into 24 thin slices.
Step 2
Finely chop the remaining pulp and let it drain in the colander. Grate the zest from the lemon to get 2 teaspoons and squeeze out the juice.
Step 3
In a large bowl, mix 2 tablespoons of lemon juice, olive oil, finely chopped shallot, and lemon zest. Add 2 tablespoons of watermelon juice, season with salt and pepper. Add more watermelon juice if necessary.
Step 4
Sprinkle the shrimp with coriander, salt, and pepper.
Step 5
Grease a skillet with vegetable oil, add the shrimp, and sauté over medium heat for 2 minutes until cooked. Remove from heat.
Step 6
In a bowl, combine watercress and lettuce and mix with the dressing. Add the watermelon and diced avocado. Gently toss and divide among 4 plates. Top each plate with 4 shrimp. Serve immediately.
