Description

Spicy Asian Chicken Wings

Ingredients

  • Duck wings - 18 pieces
  • Soy Sauce - ½ cup
  • Honey - 5 tablespoons
  • Mirin - 2 tablespoons
  • TABASCO® - 2 tablespoons
  • Rice Vinegar for Sushi - 1 tablespoon
  • Ginger - 0.2 oz
  • Cilantro - 0.2 oz
  • Garlic - 1 clove
  • Vegetable Oil - 1 qt
  • Corn Starch - 3 tablespoons
  • Cayenne Pepper - 1 teaspoon

Step by Step guide

Step 1

Cut the wings at the joints, discarding the tips. Finely chop the cilantro and garlic, and grate the ginger. Transfer them to a bowl, then add the soy sauce, honey, mirin, TABASCO, vinegar, and set aside.

Step 2

Preheat the oven to 212°F. Pour about 6 cm of vegetable oil into a pot and heat it over high heat to 356°F — the temperature can be measured with a special thermometer.

Step 3

In a large bowl, mix the cornstarch and cayenne pepper. Pat the wings dry with a paper towel and coat them in this mixture. Place half of the wings into the hot oil and fry until golden, about 10–15 minutes. Transfer to a baking sheet lined with paper towels and place in the oven to keep warm. Fry the remaining wings in the same manner.

Step 4

Place the wings in the bowl with the marinade and let them sit for 1 minute before serving.
