Spicy Baked Wings with Ranch Sauce

Ingredients

  • Duck wings - 1½ kg
  • Red Wine Vinegar - 0.3 cups
  • Salt - to taste
  • Mild Chili Spice - a pinch
  • Paprika - 1 teaspoon
  • Ground Cumin - a pinch
  • Dried Rosemary - a pinch
  • Honey - 1 tablespoon
  • Ground Dried Garlic - a pinch
  • Mayonnaise - 7½ tablespoons
  • 20% Sour Cream - 5 tablespoons
  • Kefir - ¼ cup
  • Garlic - 1 clove
  • Coarse Salt - ¼ teaspoon
  • Ground Black Pepper - ½ teaspoon
  • Vinegar essence - ½ teaspoon
  • Worcestershire Sauce - 1 teaspoon
  • Scallions - 1.8 oz
  • Dill - to taste
  • Italian chopped parsley - 2 tablespoons
  • Cayenne Pepper - to taste
  • TABASCO® - on the tip of a knife

Step by Step guide

Step 1

Prepare the marinade for the chicken wings: in a bowl, mix the dry spices (oregano, dried garlic, cumin, chili pepper, half a teaspoon of paprika) and salt. Combine with honey and mix well. Gradually add the vinegar while stirring.

Step 2

Sort the chicken wings, removing any remaining feathers. Optionally, you can cut off the wing tips. Rinse under running water and dry with a paper towel. In a deep bowl, place the wings and pour the marinade over them, mixing well to ensure all wings are coated. Let sit for 30 minutes.

Step 3

Preheat the oven to 356°F.

Step 4

Prepare the homemade ranch sauce. Chop the parsley, dill, and green onion tops. In a mortar, grind the garlic clove with coarse salt, black pepper, and cayenne pepper. Add the chopped herbs and continue to grind into a paste. In a bowl, combine mayonnaise, sour cream, and kefir. You can adjust the amount of kefir for your desired consistency. Add Worcestershire sauce, TABASCO, vinegar, and half a teaspoon of paprika. Add the green paste. Mix well. Refrigerate for a couple of hours to chill. If the sauce is too thick, thin it with kefir.

Step 5

Place the wings on a baking sheet (or better yet, on a grill rack with a baking sheet underneath to catch the drippings). Bake in the oven for 1 hour and 20 minutes.

Step 6

Serve the spicy wings with the chilled ranch sauce.
