Ingredients
- Chicken Broth - 23 fl oz
- Chicken fillet - 2 pieces
- Soba Noodles - 7.8 oz
- Peanut Butter - 1 tablespoon
- Soy Sauce - 1 tablespoon
- Chinese Black Rice Vinegar - 3 spoons
- Soy Sauce - 1 tablespoon
- Sesame Oil - 1 tablespoon
- Garlic - 2 cloves
- Sugar - ½ spoons
- Salt - a pinch
- Leek - 3 pieces
- Soy Meat - 2 spoons
Step by Step guide
Step 1
Add the chicken to the boiling broth and cook for six minutes. Remove it from the heat, cover with a lid, and let it sit for another fifteen minutes to ensure the chicken is fully cooked. Then, take it out of the broth and let it cool.
Step 2
Bring 4 liters of salted water to a boil. Gently add the noodles to the water and add two-thirds of a cup of cold water. When the water comes to a boil again, add the same amount of cold water — and repeat this process two more times, until the noodles are pliable but still firm.
Step 3
Drain the noodles in a colander, rinse them under cold water, and let them drain. Transfer the noodles to a large bowl and toss them with peanut butter.
Step 4
Combine vinegar, soy sauce, hot sesame oil, a bit of chili from the jar with oil, minced garlic, sugar, and salt. Toss the mixture with the noodles.
Step 5
Shred the chicken into strands and mix it with the noodles. Sprinkle with chopped green leek stems and toasted salted soybeans.
