Spicy Chicken Fillet in Bacon

Ingredients

  • Chicken fillet - 4 pieces
  • Light Raisins, Seedless - 1.8 oz
  • Apple - 2 pieces
  • Semi-Smoked Sausage - 8 slices
  • Butter - 1 tablespoon
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Apple Wine - ½ cup

Step by Step guide

Step 1

For the filling, peel the apples, remove the seeds, and cut them into sticks. Rinse the raisins and dry them. Sauté the apples and raisins in butter. Add the wine and simmer for 5 minutes. Let cool.

Step 2

Rinse the chicken fillet and lightly pound it. Make a slit on the side of the fillet to create a pocket, fill it with the apple filling, drizzle with the liquid from the pan where the apples were cooked, and secure the slit with a toothpick.

Step 3

Wrap each fillet in 2 slices of bacon. Sauté in another pan with butter.

Step 4

Place the sautéed chicken fillets on a baking sheet lined with foil. Drizzle with the remaining liquid from the pan.

Step 5

Bake the fillets for 15 minutes in an oven preheated to 356°F.

Step 6

For garnish, wash the arugula, peel the apple, and cut it into wedges. Serve the finished fillets on plates, garnished with arugula and apple wedges.
