Spicy dressing for tomato salad
Ingredients
- Garlic - 2 cloves
- Scallions - 1 bunch
- Vegetable Oil - 3 fl oz
- Butter - 0.7 oz
- Coriander essential oil - 0.1 oz
- Toasted Cumin Seeds - 0.1 oz
- Fresh basil leaves - 4 pieces
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Toast the coriander and cumin seeds in a dry skillet until they become aromatic.
Step 3
Separate the green part of the onion from the white part and chop them separately.
Step 4
Finely chop the garlic. Slice the basil into strips.
Step 5
Place the coriander, cumin, white part of the onion, and garlic in a heatproof bowl.
Step 6
In a saucepan, heat vegetable oil until it reaches a boil. Pour the hot oil over the spices in a bowl.
Step 7
Add the butter to the bowl and mix well.
Step 8
Allow the dressing to cool to a slightly warm state, then add the green part of the onion and the basil leaves. Taste the dressing and season with salt and pepper to your liking.

The resulting dressing is perfect for a tomato salad (it's best to serve the tomatoes as carpaccio, in a single layer).

The dressing (without herbs) can be stored in an airtight container in the refrigerator for 3–4 days.
