Spicy Eggplant Salad
Ingredients
- Eggplants - 3 pieces
- Bell Peppers - 3 pieces
- Carrot - 1 piece
- Onion - 1 piece
- Vinegar - 2 fl oz
- Sugar - 2.5 oz
- Salt - 1 tablespoon
- Vegetable Oil - 3 fl oz
- Garlic - 4 cloves
- Chili Pepper - to taste
Step by Step guide
Step 1
Slice the eggplants into rounds and blanch in boiling water for 3 minutes. Drain the eggplants in a colander.
Step 2
Slice the onion into half-rings, cut the bell peppers into strips, and grate the carrot.
Step 3
Sauté the prepared vegetables in vegetable oil (50 ml).
Step 4
Combine the cooled eggplants and sautéed vegetables in a deep bowl. Mix the vinegar, sugar, and salt, stir, and pour over the vegetables, adding the remaining vegetable oil.
Step 5
Press the garlic and add chili pepper to taste. Chop the herbs and add them to the salad. Gently mix. Let it sit for a few hours, but preferably overnight in the refrigerator.
