Spicy Glazed Chicken
Ingredients
- Onion - 1 head
- Chicken Thighs - 2 lbs
- Garlic - 1 clove
- Ground coriander - 2 tablespoons
- Paprika - 1 teaspoon
- Mild Chili Spice - 1 piece
- Ground Cumin - 2 tablespoons
- Meyer Lemon Juice - 0 fl oz
- Soy Sauce - 2 tablespoons
- Thyme - 2 stems
- Sugar - 2 tablespoons
- Salad Potatoes - 17.6 oz
- Vegetable Oil - 2 tablespoons
- Chicken Broth - 20 fl oz
Step by Step guide
Step 1
Chop the onion and mince the garlic. Remove seeds from the chili pepper and chop it.
Step 2
Place the chicken pieces in a sealable plastic container, pierce with a fork, and sprinkle with onion, garlic, and spices. Add the chili, lemon juice, soy sauce, and thyme. Mix well, cover, and refrigerate for at least 30 minutes.
Step 3
In a skillet, heat the vegetable oil with the sugar until the sugar dissolves and the mixture darkens. Add the marinated chicken pieces (leave the onion) and sauté for 5 minutes, stirring.
Step 4
Add the chopped potatoes and the onion from the marinade, and sauté for 10 minutes over medium heat.
Step 5
Pour in the broth, cover, and simmer for 25 minutes. Then cook for another 10 minutes uncovered. Garnish with thyme and serve.
