Spicy Homemade Ketchup
Ingredients
- Tomatoes - 4 lbs
- Garlic - 3 cloves
- Sweet Red Onion - 1 piece
- Malt Vinegar - 3 fl oz
- Sugar - 3.5 oz
- Mild Chili Spice - 1 piece
- Paprika - 3 teaspoons
- Cinnamon - 1 teaspoon
- Ground coriander - ½ teaspoon
- Grated Ginger Root - ½ teaspoon
- Ground clove - ½ teaspoon
- Salt - to taste

Step by Step guide
Step 1
Chop the tomatoes. In a deep pot or pan, bring the tomatoes to a boil and cook for 5 minutes.
Step 2
Pass the mixture through a sieve. Pour the puree back into the pot.
Step 3
Slice the onion into large half-rings, crush the garlic, and add the whole chili pepper to the tomatoes (optional). Cook on low heat until the onion and garlic are softened, about 20 minutes.
Step 4
Place bottles or jars with screw caps in an oven preheated to 130–284°F for 15–20 minutes.
Step 5
Remove the chili pepper from the puree, pass the mixture through a sieve again, and return it to the pan.
Step 6
Add all remaining spices, sugar, salt, and vinegar. Simmer for about 5 minutes and be sure to taste, adjusting the amount of spices to your preference if necessary.
Step 7
If the sauce is too thin, it can be reduced for 5 minutes by increasing the heat to maximum. After cooling, the ketchup will thicken slightly.
Step 8
Pour the ketchup into bottles or jars, seal with lids, and turn them upside down. Store at room temperature.
