Description

- Duck wings - 4 lbs
- Butter - 2.6 oz
- Vegetable Oil - 17 fl oz
- Habanero Pepper - 3 pieces
- Garlic - 2 cloves
- Passata Tomato Sauce - 1 tablespoon
- Dried Rosemary - a pinch
- Ground Cumin - a pinch
- Lime Juice - 2 spoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the oven to 200 degrees.
Step 2
Cut the wings in half. In a deep frying pan, heat vegetable oil and fry the wings in batches until golden brown, about 10–12 minutes. Transfer them to a baking sheet and place in the oven. Cook for an additional 15–20 minutes.
Step 3
Meanwhile, prepare the sauce: sauté the garlic in vegetable oil, add the deseeded chili peppers, then add the tomato paste, cumin, and oregano (you can add a little water to create a puree).
Step 4
Place the wings in the sauce and add lime juice. Mix well.
