Spicy Noodles with Broccoli and Mushrooms
Ingredients
- Vegetable Bouillon Cube - 1 piece
- Egg noodles - 3.5 oz
- Broccoli florets - 1 piece
- Sesame Oil - 1 tablespoon
- Shiitake Mushrooms - 8.8 oz
- Garlic - 1 clove
- Chili Flakes - ½ teaspoon
- Green onions - 4 stalks
- Hoisin Sauce - 2 tablespoons
- Roasted cashews - 1½ tablespoons
Step by Step guide
Step 1
Place the bouillon cube in a pot of water, then bring to a boil.
Step 2
Add the noodles, bring the broth to a boil, and cook for 2 minutes.
Step 3
Add the broccoli and cook for another 2 minutes. Reserve a cup of broth, then drain the noodles and vegetables.
Step 4
Heat a skillet or wok, add the sesame oil, and stir-fry the mushrooms for 2 minutes until golden.
Step 5
Add the garlic, chili flakes, and most of the green onions, cook for another minute, then toss in the noodles and broccoli.
Step 6
Add 3 tablespoons of broth and hoisin sauce, then mix for 1 minute using tongs or 2 wooden spoons.
Step 7
Serve the noodles topped with cashews and the remaining green onions. Add sesame oil to taste (optional).
