Ingredients
- Brown Sugar - 4 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- Boneless pork shoulder - 9 lbs
- Onion - 2 pieces
- Chipotle Pepper Paste - 1 can
Step by Step guide
Step 1
Prepare a large deep pot that can fit the shoulder whole.
Step 2
Cut both onions into quarters; they will serve as a base for the shoulder.
Step 3
Place the onion quarters at the bottom of the pot.
Step 4
Rub the pork shoulder with salt and pepper on all sides and place it in the pot.
Step 5
Lay the peppers on top of the shoulder.
Step 6
Sprinkle the sugar around the sides of the shoulder, at the bottom of the pot.
Step 7
Pour sparkling water over the shoulder.
Step 8
Cover the pot with a lid and place it in a preheated oven at 302°F for six hours.
Step 9
WARNING! After THREE hours, turn the shoulder over and continue cooking for another THREE hours.
