Spicy Potato with Carrots
Ingredients
- Salad Potatoes - 21.2 oz
- Turnips - 8.8 oz
- Olive Oil - 2 tablespoons
- Mustard Greens - ½ teaspoon
- Paprika - 1 teaspoon
- Toasted Cumin Seeds - 1 teaspoon
- Onion - 1 piece
- Garlic - 2 cloves
- Grated Ginger Root - 1 teaspoon
- Ground ancho chili pepper - 1 piece
- Tomatoes - 2 pieces
- Cilantro - 1 bunch
Step by Step guide
Step 1
In a large pot, pour in water, add chopped potatoes and carrots, and boil for about 10 minutes until they become soft. Drain the water and set aside.
Step 2
Heat the oil in a pan over medium heat, add the mustard seeds, and gently shake the pan until the seeds start to pop, then add the cumin seeds and paprika, and sauté in the oil over low heat, being careful not to burn the spices.
Step 3
Add the onion and sauté over medium heat for a couple of minutes until it becomes soft, then add the garlic (pressed), ginger, and chili, cooking for another couple of minutes until the mixture becomes more aromatic. Next, add the tomatoes and curry leaves, cooking over low heat for 5–10 minutes until the tomatoes soften.
Step 4
Add the potatoes and carrots, stir, and cook over low heat for 10–15 minutes. Just before serving, add the cilantro and mix.
