Spicy sauce with chili, papaya, and mango
Ingredients
- Serrano Chili - 2 pieces
- Papaya flesh - 1 piece
- Red Long Chili Peppers - 5 pieces
- Mango - 1 piece
- Garlic - 2 cloves
- Onion - 1 head
- Cilantro - ¼ cup
- Dark rum - ¼ cup
- Lime Juice - 2 tablespoons
- Raisins - 1 tablespoon
- Cayenne Pepper - ¼ teaspoon
- Coarse Salt - to taste
Step by Step guide
Step 1
Peel and finely chop the small papaya and mango. Also, peel and finely chop the onion and garlic.
Step 2
Preheat the oven to 248°F.
Step 3
Place the dried chili peppers on a baking sheet and roast until fragrant, about 10 minutes. Transfer to a bowl and cover with boiling water. Let sit until softened, about 20 minutes. Drain, reserving the water. Remove seeds and stems from the peppers.
Step 4
Meanwhile, grill the serrano chilies over an open flame until the skin is charred. Transfer to a bowl, cover with plastic wrap, and let sit for 5 minutes. Peel off the skin, seeds, and stems.
Step 5
In a food processor, combine all the chilies, papaya, mango, onion, garlic, cilantro, rum, lime juice, raisins, and cayenne pepper. Blend until smooth, adding about 3 tablespoons of the reserved water. Season with salt to taste.
