Spicy sous vide duck with plums
Ingredients
- Duck Breast - 2 pieces
- Soy Sauce - 2 fl oz
- Chinese Five Spice - 3 spoons
- Vegetable Oil - 0 fl oz
- Mild Chili Spice - 1 piece
- Plums - 8 pieces
- Brown Sugar - 1.1 oz
- Ocean salt - 4.9 oz
- Butter - 1.1 oz
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Make shallow crosshatch cuts in the skin.
Step 3
Dissolve sea salt in 2 liters of cold water and place the duck in it for 1.5 hours.
Step 4
Finely chop the chili pepper.
Step 5
Mix soy sauce, 1 tablespoon of brown sugar, five spice powder, and chili pepper with vegetable oil.
Step 6
Rinse the duck breasts under running water and pat them dry.
Step 7
Transfer the breasts to special bags, add the sauce, and vacuum seal.
Step 8
Cook the duck breasts sous-vide for 2 hours at 129°F.
Step 9
Cut the plums in half and remove the pits.
Step 10
Remove the cooked breasts from the bags (reserve the juices), and pat them dry.
Step 11
Sear the duck skin-side down in butter until golden brown. To prevent the butter from burning, you can add a little vegetable oil to the pan.
Step 12
Transfer the duck to a cutting board and let it rest for a few minutes.
Step 13
In the skillet where the duck was cooked, add 1 tablespoon of brown sugar and sauté the halved plums over high heat. Once the plums are caramelized, add the juice from the vacuum bags and let it reduce for 1–2 minutes.

Serve the spiced sous-vide duck with plums, rice, or noodles.
