Ingredients
- Pork Blood - 10.6 oz
- Smoked Ham on the Bone - 3.5 oz
- White Cabbage - 24.7 oz
- Carrot - 1 piece
- Onion - 1 piece
- Canned Tomatoes (Pelati) - 5.3 oz
- Garlic - 2 cloves
- Sugar - 1 tablespoon
- Salt - to taste
- Ground coriander - to taste
- Ground Black Pepper - to taste
- Mild Chili Spice - to taste
- Dried parsnip - 2 tablespoons
- Bay leaf - 1 piece
Step by Step guide
Step 1
Cut the pork into small pieces and fry in a well-heated skillet with a small amount of vegetable oil until golden brown.
Step 2
Add finely chopped onion and grated carrot, and sauté for a couple of minutes. Add the tomatoes and sugar, mashing the tomatoes with a fork. Place the bay leaf in the skillet. Stew for 2-3 minutes to evaporate the acidity from the tomatoes. If using tomato paste, it should be slightly diluted with water.
Step 3
Add the chopped cabbage, mix well, cover with a lid, and reduce the heat. I do not add water as the cabbage releases enough juice. Stew for about 20-30 minutes. The cabbage should not turn into mush.
Step 4
Five minutes before it's done, add salt, the smoked meats (ham, hunter sausages), and spices: chili, coriander, black pepper, parsley, and garlic. It's better to remove and discard the bay leaf. I add enough chili to make it 'eye-watering.' It's best to add all spices gradually, adjusting to your taste.
