Ingredients
- Butter - 1 teaspoon
- Spinach - 3.5 oz
- Farm fresh eggs - 4 pieces
- Wheat Flour - 2 tablespoons
- English Dry Mustard - a pinch
- Chives - 1 tablespoon
- Chervil - 1 bunch
- Goat cheese - 1.8 oz
- Yellow Cherry Tomatoes - 3 pieces
- Scallions - 2 pieces
- Basil - 1 tablespoon
- Olive Oil - 1 tablespoon
- Balsamic Vinegar - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the oven to 464°F. Place the Swiss dough on a baking sheet and grease it with butter. In a saucepan, heat the oil and sauté the spinach for about a minute, stirring. Sprinkle with salt and pepper. Drain any excess oil.
Step 2
Whisk the egg whites until frothy, then gradually add the sifted flour.
Step 3
In a separate bowl, mix the egg yolks with the mustard powder. Pour this mixture into the flour and mix thoroughly. Spread it over the dough and distribute evenly.
Step 4
Sprinkle with herbs, then layer the spinach and diced goat cheese on top. Place in the oven for 8 minutes.
Step 5
Slice the tomatoes into wedges and place them in a salad bowl, add finely chopped onions and basil, drizzle with vinegar and olive oil. Add seasonings and mix well.
Step 6
Remove the baking sheet from the oven. Carefully transfer the hot layers onto a towel to avoid burning your hands, and quickly roll it up. Slice and serve with the salad.
