Spinach and Tofu Salad with Peanut and Miso Dressing
Ingredients
- Soft tofu - 14.1 oz
- Fresh Spinach Leaves - 3 oz
- Peanut Butter - 2 tablespoons
- Soy Sauce - 2 tablespoons
- Miso Paste - 1 tablespoon
Step by Step guide
Step 1
Place the tofu on a flat plate covered with a kitchen towel.
Step 2
Cover the tofu with another towel and a plate, then place a couple of 900 g cans on top to press the tofu and remove excess water. Leave for 20 minutes.
Step 3
Unwrap the tofu and cut it into small pieces. Transfer to a large bowl. Add the spinach and mix well.
Step 4
Whisk together the peanut butter, soy sauce, miso paste, and two tablespoons of water until smooth. Drizzle the dressing over the tofu and spinach and mix well.
Step 5
Transfer to a serving bowl and serve, or refrigerate for an hour and serve chilled.
