Spinach stewed in coconut milk

Ingredients

  • Olive Oil - 1 tablespoon
  • Ocean salt - to taste
  • Sun-Dried Tomatoes - 1 piece
  • Coconut Milk - ½ can
  • Fresh basil leaves - 14.1 oz
  • Grated Ginger Root - 1 tablespoon

Step by Step guide

Step 1

Finely chop the ginger and sauté in olive oil for 30 seconds.

Step 2

Add the chopped tomato and sauté for 1 minute.

Step 3

Add the spinach, season with salt. Stew for about 2 minutes until the spinach is tender.

Step 4

Pour in the coconut milk and simmer on low heat until most of the liquid evaporates.
