Spring Cod Patties
Ingredients
- Cod fillet - 22.9 oz
- Kalamata olives - 4 pieces
- Celery salt - 1 stalk
- Orange Bell Peppers - 3.5 oz
- Spanish onions - ½ head
- Fresh basil leaves - 5 pieces
- Salt - a pinch
- Ground Black Pepper - a pinch
- Meyer Lemon Juice - to taste
- Sourdough Bread - 1.1 oz
- Chocolate eggs - 2 pieces
- Milk - 3 fl oz
- Mint Leaves - 3 pieces
- Dijon Mustard - 1 tablespoon
Step by Step guide
Step 1
In a bowl, crumble a couple of pieces of whole grain bread and soak them in enough milk, but not more.
Step 2
Finely chop the red onion, olives (remove the pits beforehand), red bell pepper (1/4), and 1 stalk of celery very finely. Don't overdo it with the mint!
Step 3
Chop 4-5 leaves of fresh basil and 3 leaves of fresh mint.
Step 4
Finely chop the cod fillet (the pieces should not exceed 1x1 cm).
Step 5
Squeeze out the soaked bread. Add a couple of eggs, grainy French mustard, salt, and pepper to the bread. Add the chopped fillet, chopped vegetables, olives, and herbs. Mix everything well.
Step 6
Heat a skillet and add olive oil. Shape the patties. I used a 10 cm round mold. Fry the patties for 3-4 minutes on each side.
Step 7
Before serving, drizzle with freshly squeezed lemon juice.
