Spring Salad with Squid

Ingredients

  • Squid - 4 pieces
  • Orange Bell Peppers - 1 piece
  • Tomatoes - 3 pieces
  • Courgette - 1 piece
  • Chicken Egg - 2 pieces
  • Canned Corn - 1 can
  • Mayonnaise - to taste

Step by Step guide

Step 1

Place thawed squid in boiling water with added bay leaf and salt.

Step 2

Cook for about 2–3 minutes, but no longer, as overcooked squid becomes rubbery.

Step 3

Drain the squid in a colander and rinse under cold water, removing the outer membrane. Cut in half and clean out the insides. Set aside to cool.

Step 4

Wash and dice the vegetables and eggs.

Step 5

Add the corn and diced squid to the chopped vegetables.

Step 6

Add mayonnaise. Mix everything well.
