Description
This recipe is very quick and delicious. Of course, sometimes I make classic patties, but I also bake them in the oven without breading. The square shape turns out even tastier, juicier, and requires less fuss. Celery is optional; you can add any herbs and garlic. I don't put garlic in the chicken patties because it overpowers the delicate flavor. Sometimes, I coarsely chop about 300 grams of fresh mushrooms into the mixture.
Ingredients
- Vegetable Oil - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Onion - 2 heads
- Grated Pecorino Pepato Cheese - 1.8 oz
- Chicken Egg - 2 pieces
- Courgette - 10.6 oz
- Skin-On Chicken Breasts - 2 lbs
- Celery stalk - 2 pieces
- Hercules Oats - 4 spoons
Step by Step guide
Step 1
Coarsely chop the chicken breasts in a food processor — I do it in the processor on pulse for 3–4.
Step 10
Bake until golden brown for about 25–30 minutes.
Step 11
Once ready, cut into squares.
Step 2
Chop the onion and celery in a food processor, then add them to the ground meat.
Step 3
Grate the zucchini on a coarse grater and add it to the minced meat without squeezing out the moisture.
Step 4
Add the oats and eggs to the mixture, then season with salt and pepper.
Step 5
Knead everything well, and you can add a little vegetable oil.
Step 6
Preheat the oven (turbo/convection) to 392°F.
Step 7
Line a baking sheet with parchment paper and brush it generously with oil.
Step 8
Spread the chicken mince evenly on parchment paper.
Step 9
Sprinkle with grated cheese.
