Ingredients
- Squid - 9.9 oz
- Chorizo - 1.4 oz
- New Potatoes - 8.5 oz
- Canned White Asparagus - 5.6 oz
- Mango - 7.1 oz
- Olive Oil - 10 fl oz
- Mixed salad greens - 4.2 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Boil the potatoes until tender and cut them in half. Blend the mango into a puree and mix it with 280 ml of extra virgin olive oil.
Step 2
Clean the squid. Cut each artichoke into six pieces. Slice the chorizo into thin rounds. Season the potatoes, artichokes, and squid with salt and pepper.
Step 3
Lightly sauté the artichokes and potatoes in a tablespoon of olive oil, then add the squid after one minute, and the chorizo after another minute. Cook for one more minute and then remove from heat.
Step 4
Arrange the mango sauce on a plate, then add everything from the skillet on top, and finish with a mix of salad greens (arugula, radicchio, corn, frisée).
