Squid and Shrimp Salad with Cucumber in Lemon-Sour Cream Dressing
Ingredients
- Squid - 7.1 oz
- Oyster Mushrooms - 3.5 oz
- Shrimp - 7.1 oz
- Onion - 1 piece
- Cucumbers - 3 pieces
- Garlic - 2 cloves
- Meyer Lemon Juice - 2 tablespoons
- Olive Oil - 3 tablespoons
- 20% Sour Cream - 3 tablespoons
- Egg white - 2 pieces
- Salt - to taste
- Citrus Zest Mix - 1 tablespoon
- Ground Black Pepper - to taste
- Worcestershire Sauce - ½ teaspoon
Step by Step guide
Step 1
Finely chop the onion. Sauté half with the sliced oyster mushrooms and garlic, and blanch the other half in boiling water. Cool both.
Step 2
Boil the eggs, peel, and cut into cubes. Set aside some for garnish.
Step 3
Boil the squid, cool, and cut into rings for garnish and slices for the salad.
Step 4
Boil and peel the shrimp (or buy pre-cooked and peeled).
Step 5
Wash the cucumber and cut into cubes.
Step 6
In a bowl, mix the dressing: olive oil, lemon juice, sour cream, Worcestershire sauce, salt, and pepper. Set aside some dressing in another bowl at a rate of 1 tablespoon per serving.
Step 7
Use a special grater (or a very sharp knife) to zest the lemon.
Step 8
Chop the green onion, setting aside some for garnish.
Step 9
Assemble the salad: pieces of squid, shrimp, mushrooms, cucumber, 2/3 of the lemon zest, and green onion. Season with a little salt and pepper, dress, mix, and let it rest in the refrigerator for about 20 minutes.
Step 10
Serve in bowls, placing three rings of squid on top, filling the centers with chopped egg, and carefully drizzling with dressing. Sprinkle with green onion and garnish with lemon zest.
