Ingredients
- Squid - 10.6 oz
- Mulled Wine - 1 tablespoon
- Garlic - 1 head
- Wild Garlic Greens - 1.8 oz
- Leek - 1.4 oz
- Pork fat - 0.2 oz
- Vinegar essence - 1 teaspoon
- Vegetable Oil - 3 tablespoons
- Starch film - 2 teaspoons
- Sodium glutamate - 0.1 teaspoons
- Salt - to taste
Step by Step guide
Step 1
Soak the squid in cold water for 1 hour, rinse, and remove the membrane.
Step 2
Cut into squares with sides of 3 cm.
Step 3
Prepare the sauce from finely chopped garlic greens, garlic cloves, minced leek, salt, monosodium glutamate, wine, vinegar, boiling water, and starch diluted with a small amount of cold water.
Step 4
Boil the squid for 1–2 minutes in boiling water, remove, and let the water drain.
Step 5
Heat the pork fat to 374°F, fry the squid in it over high heat for 2 minutes, and quickly remove.
Step 6
Heat the oil in another pan, add the squid, turn them several times, and absorb the sauce.
Step 7
As soon as the pieces of squid are coated with sauce, the dish is ready.
