Ingredients
- Squid - 21.2 oz
- Meyer Lemon Juice - 2 tablespoons
- Red Wine Vinegar - 1 tablespoon
- Olive Oil - 2 fl oz
- Garlic - 1 clove
- Salt - ½ teaspoon
- Ground Black Pepper - ¼ teaspoon
- Spanish onions - 1 head
- Kalamata olives - 2.1 oz
- Marinated cherries - 14.1 oz
- Celery stalk - 2 pieces
- Italian chopped parsley - 2.5 oz
Step by Step guide
Step 1
Rinse the squid under cold water and pat dry with a paper towel. Cut into thin rings.
Step 2
Place the squid rings in boiling salted water for 40-60 seconds. Drain the water and immediately transfer to ice or rinse under cold water. Once cooled, pat dry.
Step 3
Mix the vinegar, oil, minced garlic, lemon juice, salt, and pepper. Add the sliced red onion and let sit for 5 minutes.
Step 4
Meanwhile, in a bowl, combine the squid rings, olives, tomatoes, chopped celery, and parsley. Drizzle with the dressing and sprinkle with salt and pepper. Toss and let sit for 15 minutes.
