Description

You can substitute squid with shrimp or chicken breasts.

Ingredients

  • Rice Noodles - 3.2 oz
  • Carrot - 1 piece
  • Scallions - 1 piece
  • Courgette - ¼ piece
  • Chopped Green Onions - 5 tablespoons
  • Fish Oil - 3 tablespoons
  • Lime - 1 piece
  • Brown Sugar - 1 teaspoon
  • Sesame Oil - ½ teaspoon
  • Mild Chili Spice - 2 pieces
  • Garlic - 1 clove
  • Peanut Butter - 1 tablespoon
  • Squid - 2 pieces

Step by Step guide

Step 1

Soak the noodles in boiling water for 5 minutes. Drain and dry well. Transfer to a bowl.

Step 2

Add grated carrot, thinly sliced cucumber, chopped green onion, and 4 tablespoons of cilantro.

Step 3

In a small bowl, mix together fish sauce, lime juice, sugar, sesame oil, finely chopped chili, minced garlic, peanut oil, and very finely chopped remaining cilantro.

Step 4

Drizzle half of the dressing over the noodles and vegetables and mix well.

Step 5

Heat the peanut oil in a wok over high heat until it begins to smoke. Cut the squid into rings and fry in batches in the oil for 45 seconds. Add to the remaining dressing and mix.

Step 6

Serve the salad on plates and top with the squid.
