Squid Salad with Cucumbers
Ingredients
- Squid - 2 lbs
- Mixed salad greens - 1 bunch
- Meyer Lemon Juice - 4 tablespoons
- Sugar - 1 teaspoon
- Mild Chili Spice - to taste
- Marinated cherries - 0.4 oz
- Shallot - 1 piece
- Chopped Green Onions - 6 tablespoons
- Cucumbers - 5.3 oz
- Fish Oil - ¼ tablespoon
Step by Step guide
Step 1
Cut the squid's tubular body into rings about 0.5 centimeters thick, and slice the tentacles into strips of the same thickness.
Step 2
Rinse the rings and tentacles and place them in a pot of water. Boil, covered, for about three minutes, or until the squid becomes opaque. Drain the water and place the squid in a bowl.
Step 3
Peel and finely chop the shallot.
Step 4
Add the fish sauce, lemon juice, salt, sugar, chili powder, and cilantro leaves to the squid.
Step 5
Mix well and taste for seasoning.
Step 6
Just before serving, arrange the salad greens on a plate. Peel the cucumber and slice it into thin rounds.
Step 7
Cut the cherry tomatoes in half vertically. Place the squid on the salad greens and arrange the cucumber slices and tomato halves around it.
