Description
Squid tends to shrink in size and become tough if boiled for more than 3 minutes. However, if you accidentally overcook the squid, boil them for a total of 20 minutes — this will restore their tenderness, although they will shrink to almost half their original size.
Ingredients
- Squid - 2 lbs
- Olives stuffed with lemon - 12 pieces
- Pickled Chanterelles - 14.1 oz
- Onion - 2 heads
- Soy Sauce - 1 teaspoon
- Herbs - 1 bunch
- Vegetable Oil - 4 fl oz
- Tomatoes - 2 pieces
- Garlic - 2 cloves
Step by Step guide
Step 1
Clean the squid bodies.
Step 2
Finely chop the mushrooms, olives, onion, and herbs, and mix them together. Add the oil and soy sauce.
Step 3
Stuff the squid bodies with the prepared filling, seal the edges, and stitch them up.
Step 4
For the sauce, cut the tomatoes into wedges. Mince the garlic and sauté it over low heat for 2 minutes, then add the tomatoes and sauté for another 2 minutes.
Step 5
Combine the squid with the sauce, season with a little salt, and simmer over low heat for about 20 minutes. Then add salt, pepper, and sprinkle with oregano to taste. Heat for another 5 minutes.
Step 6
When serving the squid, place them on a dish and drizzle with the sauce.
