Ingredients
- Squid - 8 pieces
- Olive Oil - 7 fl oz
- Crab Meat - 3 fl oz
- Meyer Lemon Juice - 1 teaspoon
- Salt - to taste
- Ground Black Pepper - to taste
- Onion - 7.1 oz
- Fresh Mint - 2 tablespoons
- Parsley - 0.7 oz
- Pitted olives - 1.8 oz
- Crab Meat - 14.1 oz
Step by Step guide
Step 1
Preheat the oven to 392°F.
Step 2
Finely chop the onion and sauté it with the finely chopped crab meat, mint, and parsley in 120 ml of olive oil until translucent. Season with salt and pepper.
Step 3
Sauté for another 2 minutes, add the pine nuts and olives, stir, and cook for another 3 minutes.
Step 4
Brush the squid bodies with olive oil, season with spices, and grill until browned on all sides.
Step 5
Stuff each squid body with the crab meat filling and secure the edges with a toothpick to prevent the filling from falling out during further cooking.
Step 6
Place in a pan and drizzle with olive oil, lemon juice, crab broth, add salt and pepper, and simmer for 4 minutes.
Step 7
Remove the squid from the pan and arrange on plates.
Step 8
Continue to stir the remaining sauce in the pan until thickened, remove from heat, and drizzle over the squid.
Step 9
Serve with fresh herbs or salad leaves to your liking.
