Ingredients
- Olives stuffed with lemon - ⅓ cup
- Celery stalk - 1 stalk
- Shallot - 3 pieces
- Citrus Zest Mix - 1 teaspoon
- Meyer Lemon Juice - 1 tablespoon
- Olive Oil - ¼ cup
- Water - 3 qt
- Squid - 17.6 oz
- Salt - 1 tablespoon
Step by Step guide
Step 1
Rinse the squid bodies under cold running water and cut them into thin rings. Cut the tentacles in half lengthwise.
Step 2
Bring water to a boil, adding 1 tablespoon of salt. For 40 seconds, drop the squid into the boiling water, then immediately place them in an ice bath. Once the squid cools, remove them from the ice and place them in a colander to drain any excess water.
Step 3
Meanwhile, slice the celery stalk, green olives, and shallots into thin rings. Mix with freshly grated lemon zest, olive oil, and lemon juice.
Step 4
When the squid stops dripping water, combine them with the other ingredients.
Step 5
Serve the salad chilled or at room temperature.
