Ingredients
- Squid - 4.6 oz
- Unagi Sauce - 1 fl oz
- Sour Cream - 2.8 oz
- Mineral water - 0 fl oz
- Mixed tomatoes of different colors - 1.8 oz
- Olive Oil - 0 fl oz
- Ocean salt - 0.2 oz
- Sugar - 0.1 oz
- Fresh Mint - 0.4 oz
- Cilantro - 0.2 oz
- Scallions - 0.4 oz
- Shichimi pepper - 0.1 oz
Step by Step guide
Step 1
Clean the squid by removing the membranes, rinse them, slice them into wide strips lengthwise, and thread them onto skewers.
Step 2
Grill for a couple of minutes, brushing both sides with unagi sauce using a brush.
Step 3
Prepare the tomato salsa by grating the pink tomatoes, making sure to leave the skin in your hand. Add a few drops of olive oil, sea salt, sugar, and cilantro leaves to the tomato flesh.
Step 4
Prepare the sour cream sauce. Add chopped mint, salt, and mineral water to the sour cream. Mix thoroughly.
Step 5
Serve the squid with two sauces. Just before serving, sprinkle the squid with 'shichimi togarashi' spice and finely chopped green onions.
