Ingredients

  • Steaks - 4 pieces
  • Romaine lettuce - 4 pieces
  • Green onion tops - 20 heads
  • Tarragon - 0 fl oz
  • Salt - 0.2 oz
  • Water - 0 fl oz
  • Whole egg - 2.3 oz
  • Green Butter - 8.8 oz
  • Sugar - to taste

Step by Step guide

Step 1

Grill the steaks for 2–3 minutes on each side.

Step 2

Briefly blanch the lettuce leaves and wrap them around the steaks, hold on the grill for another minute.

Step 3

For the sauce: mix vinegar, salt, water, and a little sugar, add the yolks and green oil.

Step 4

Place a portion of steak in a lettuce leaf on a plate. Serve the mousse sauce separately, and you can garnish the dish with charred young onions.
