Ingredients
- Steaks - 4 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Salted Butter - 1 tablespoon
- Vegetable Oil - 1 tablespoon
- Cognac - 5 tablespoons
- Heavy cream - 1 cup
- Dijon Mustard - 1 tablespoon
- Chopped Sage Leaves - 1.1 oz
Step by Step guide
Step 1
Rub the steaks with salt and pepper. In a skillet over high heat, melt the butter. Place the meat in the heated skillet and cook to your desired doneness.
Step 2
Transfer the cooked meat to plates. Drain the oil and fat from the skillet, leaving 1 tablespoon.
Step 3
Pour 4 1/2 tablespoons of cognac into the skillet, scraping up any browned bits from the bottom, and reduce the heat to medium. Add the cream and mustard, season with salt and pepper. Cook, stirring actively, until the sauce becomes smooth.
Step 4
Add the remaining cognac. Drizzle the sauce over the steaks, sprinkle with parsley and black pepper, and serve. Enjoy your meal!
