- Steaks - 2 pieces
- Crème fraîche - 2 tablespoons
- Green peppercorns - 2 teaspoons
- Campbell's Beef Broth - 9 fl oz
- Cognac - 2 tablespoons
- Butter - 1 teaspoon
- Vegetable Oil - 1 teaspoon
- Flaky sea salt - to taste

Step 1
Take the meat out of the refrigerator 1 hour before cooking.
Step 2
Pour the broth into a pot, bring to a boil, and reduce by half over medium heat for 10 minutes. Add salt if necessary. Crush the peppercorns in a mortar.
Step 3
After the meat has rested at room temperature, season it with salt. Place a skillet over high heat, heat it well, add the butter and vegetable oil. Place the meat in the skillet and sear for 3 minutes on high heat (for medium doneness), then flip and cook for another 2 minutes.
Step 4
Sprinkle the meat with cognac, let it evaporate slightly, then add the broth, followed by the crème fraîche and crushed pepper. Stir, let it simmer lightly and reduce (about 1 minute). Serve the meat on plates, drizzled with the sauce.
