- Grated Lemon Zest - 1 tablespoon
- Lemon Juice - 3 tablespoons
- Artichokes - 4 pieces
- Grated Parmesan cheese - 2.1 oz
- Yogurt - 1 piece
- Olive Oil - 2 tablespoons
- Coarse Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Place a steamer basket in a large pot and add water to the pot. Add 2 tablespoons of lemon juice. Bring to a boil, then add the artichokes. Cover with a lid and steam for about 30 to 40 minutes, until the artichokes and stems are tender.
Step 2
Meanwhile, blend the Parmesan, yogurt, oil, lemon zest, and the remaining 1 tablespoon of lemon juice with 3 tablespoons of water in a blender until smooth; season with salt and pepper. Serve the artichokes with the yogurt sauce.
