Description
Chicken loves fruits, and it pairs especially well with mandarins, whose juice beautifully moistens the dry meat of the breast.
Ingredients
- Broccoli - 5 oz
- Shallot - 0 oz
- Sweet Pepper - 1 piece
- Feta cheese - 5 oz
- Chicken fillet - 4 pieces
- Mandarins - 8 pieces
- Ginger - 0 oz
- Cardamom - 3 pieces
- Star anise - 1 piece
- Garlic - 1 clove
- Butter - 0 oz
- Sugar - 2 spoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Break the broccoli into small florets.
Step 3
Finely chop the shallots and garlic, and dice the red pepper into 7 mm cubes.
Step 4
Mix the vegetables with feta cheese.
Step 5
Season the chicken fillets with salt and pepper to taste. Make a deep cut on the side of each breast to create a pocket. Stuff this pocket with the vegetable filling.

Preheat a grill pan, brush it with vegetable oil, and cook the chicken breasts on one side for 2 minutes to achieve a golden grill mark on the meat.

Place the stuffed chicken breasts in the steamer and cook for 20 minutes.

For the sauce, peel the mandarins and blend the pulp in a blender.

Strain through a sieve, pour the mandarin juice into a saucepan, add sugar, a few large pieces of ginger, cardamom, and a star anise. Reduce the juice by a third.

At the end, add the butter to the sauce over low heat and melt it, stirring actively.
