In my opinion, of all the ways to prepare dorado, this one most clearly reveals its delicate flavor.
Ingredients
- Ground coriander - 4 stems
- Dorado - 2 pieces
- Onion - ½ head
- Soy Sauce - 2 teaspoons
- Olive Oil - 4 tablespoons
- Grated Ginger Root - 1 tablespoon
- Salt - to taste
Step by Step guide
Step 1
Clean the fish from scales, entrails, and gills. Make cross cuts on each side. Salt it. Wrap each dorado in parchment paper to form an envelope.
Step 2
Cook the fish in the envelopes in a steamer under a lid for 12 minutes.
Step 3
During this time, pluck the cilantro leaves from the stems and make two very thin slices from the young onion. Cut the ginger into thin petals and fry in olive oil until crispy.
Step 4
On the cooked dorado, arrange the onion in half rings and the cilantro leaves. Drizzle with hot ginger oil — its temperature will soften the vegetables. Sprinkle with soy sauce.
