- Fish - 17.6 oz
- Fresh Mushrooms - 7.1 oz
- Dry White Wine - 3 tablespoons
- Wheat Flour - 1 tablespoon
- Water - 1 cup
- Salt - to taste
- Vegetable Oil - 2 tablespoons
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Place the cleaned, blanched, rinsed, and sliced fish in a shallow pot. Between the pieces of fish, add the cleaned, washed, and sliced mushrooms (such as porcini or champignons). Season the fish with salt, sprinkle with pepper, add the white wine, a cup of broth (or water), cover the pot, and cook for 15-20 minutes.
Step 2
Once the fish is cooked, drain the broth into another pot, place it on the heat, and boil until about a cup remains. Add a heaping tablespoon of flour mixed with the same amount of oil, and while stirring, boil for another 3-4 minutes. Remove the resulting sauce from the heat, add a piece of butter, and stir again to combine the butter with the sauce, add salt, and strain. If the fish is cooked without wine, add a teaspoon of lemon juice or diluted citric acid to the finished sauce.
Step 3
When serving, transfer the pieces of fish to a warmed dish, place mushrooms on top of each piece, and drizzle with the prepared sauce.
